Ancient Grain - Black Musu Barley Flakes
Black barley is an ancient grain originating in the Nile Valley in around 4,500BC, and while it was nearly lost to the Western world, we are now seeing renewed interest in recent times due to its many beneficial properties. The Whole Musu black barley grain is a delicious ancient cereal with small dark purply-black coloured kernels which retain their colour upon cooking. The colour comes from the high concentration within the grains skin of anthocyanin pigments, a naturally occurring anti-oxidant. Upon cooking it has a firm and chewy bite, giving a pleasant amount of resistance, with a sweet and nutty flavour.
Application ideas:
• Cereals. Musu black barley flakes are a beautiful addition to your home made granolas, muesli, cereal bars and some pudding lines, where the striped flake provides a striking visual contrast.
• Food-to-go. The whole par-cooked (which helps minimise cooking times) Musu black barley grains are ideal for inclusion into ready-to-eat salads. The colour of these grains produces a visual contrast within a grain mix and provide a very desirable level of bite for improved satiation. Alternatively, Musu black barley, can replace pearl barley within recipes for example in risotto style dishes.
• Baking. Musu black barley flakes makes an excellent topping for bread.
